So, back in the day I was not a fan of Kale. I have always been a fan of being healthy, but I could just not get over how gross Kale was and how everyone around me was lying about the amazing green terror. Nutritionally speaking, kale is a rock star, high amounts of beta-carotene, vitamin C, and vitamin K. You should like it.
But then I went to Acorn here in Denver and my man ordered Kale salad.. uh the waste.. But since I don’t like to watch my husband eating without eating myself I tried it and it a-ma-zing. Better than any other salad I have ever had. Pinky swear.
It was so good that we went back to Acorn solely to figure out the recipe on the Kale salad, by complementing the waitress to pieces she finally gave in and gave us the right direction.
And here it comes, our version of the best salad in the world, and it is amazing.
- Kale. Chopped to small pieces.
- Olive oil, the better, the better. Did you get that?
- A lime, or a half. Start with a half.
- Shredded parmesan. NOT the dry, already shredded, one, but the expensive one. Its always worth it.
- A finely, thin sized Granny Smith apple.
And here is the twist to the superfood salad. If you want to make it truly amazing it needs something to take it down a notch. Everything in this salad is so far super healthy and delicious. But if you want to make it jaw dropping… crush 3-5 candied pecans and sprinkle in it. Or more.. to each is own. No shame, no blame. If you try this, let me know!
