So since my husband is American he believes pancakes are for breakfast.. and as a swede and European I KNOW that pancakes are for dinner. But my husband also has a very romantic view on Sunday breakfasts and how you drink coffee and eat pancakes in eternity, all drenched in maple syrup. So I give in for the breakfast idea because dinner can never sound as romantic.
We do not offer sugar to our kiddo yet. He is mad as is and we are not equipped for a sugar crash on top of that so I tried to make Almond flour pancakes. Heeeeyoooo!
So our kid still went crazy over these and screeeemed as soon as his mouth was not stuffed, but it was a loving “your food is amazing mom” kinds scream and I can take that.
Here is the recipe:
1 Cup almond flour
¼ cup of liquid. I use heavy cream but you can use water if you prefer.
a pinch of salt
a tiny pinch of vanilla bean paste or a few drops of vanilla extract
Mix it all, heat butter in a skillet over medium heat. Cook until the edges are dry and then flip. Maybe four min on each side.
